I think I may have mentioned before that I am a pie person. Actually, we are a pie family. It's completely normal to see pies on our table all year round. Hands down our favorite is apple, but once in a while we cheat on apple and have blueberry (our second favorite) ♥
Blueberry pie is an essential part of summer. It's like going out for ice cream or going to beach, both of which I am overindulging in so far this summer : )
For one thing, blueberry pie is my mom's favorite and we always have it on or around her birthday, which as last week. July wouldn't be July without blueberry pie.
Not only to I love to eat pie, I also love the process of making pie. I love making my own dough, kneading it in my hands, and rolling it out. There is satisfaction in that for me.
It's very therapeutic : )
My Nana would make pies all the time when I was little. I leaned to love this process from her. And I love using her touch of crimping the edges with a fork. That was her signature. And now it's mine ♥
Anyway, without further adu, here is my recipe for blueberry pie. It's very simple. Nothing fancy. Some things don't need anything extra. The blueberries are the star!
3/4 cup sugar
2 tablespoons quick cooking tapioca
1/4 tsp salt
4 cups fresh blueberries
double pie crust, either packaged or homemade

Grease and flour a 9 inch pie plate. Roll out and fit the bottom crust into the plate.
Dump the blueberries, sugar, tapioca, and salt into the pie plate. Give it all a light mix with a fork, just so the blueberries are coated.
Cover with the rolled out top crust. Fold the top edge under the bottom edge and crimp closed : )
Poke a few steam holes with a fork.
Brush with an egg wash and sprinkle with sugar.
Bake at 400 degrees for 1 hour.
Your pie will be golden brown and delicious!
Serve with ice cream....obviously! ♥

We are a pie family, too! I think our favourite is strawberry rhubarb, then apple, then blueberry. Anita doesn't like blueberry. I really want to try making a peach pie this summer. I've never made one before. Have you? Also, I've never used quick cooking tapioca in my pies, only flour to thicken. Nor have I ever greased and floured the pie pan. I just place the pie dough right into the glass pan and I've never had any issues with sticking. It's interesting to see how you make your pies. I, too, find it very satisfying to make my own dough. All this talk about pie is making me hungry!!!
