I feel as those these days of summer are quickly slipping away . All of a sudden I find myself shopping for school supplies and craving comfort food. Last night I even saw Halloween candy at the supermarket! Whaaat??? At first glance I was horrified, but then I must admit a part of me got a little bit excited. The fall is my favorite time of year. And as much as I love summer and am sad to see it go I'm looking forward to the cooler nights, crisp leaves, and the smell of a wood burning stove in the air. I'm ready.
I'm also ready to get back into a set schedule and routine. This summer has been a crazy free-for-all! We've had fun at the beach, took a road trip to OH, visited amusement and water parks, and had the best birthday party a six year old (wow!) could ask for! In the midst of all that I haven't had much time for baking (or blogging). I feel like the blogging world slows down a bit in the summer, as everyone would rather be out and about getting ice cream and having fun. I'm happy to back and my schedule will now allow me to blog on a more routine basis. Yay!
The other morning while having coffee I made an impromptu Autumn Bucket List. Some of the things I scribbled down were:
*make apple cider donuts
*ride my new/old bike more (I just got a bike that I am SO happy with! It's old, but new to me : )
*declutter my house and have a yard sale
*make chocolate pumpkin whoopee pies!
*use my crockpot more
When I start thinking in Fall mode I'm happy ♥
My son starts first grade in two weeks and we still need to get a lunch box, a haircut, and do a book report. Nothing like waiting till the last minute : ) This year will be his first year of going to school all day so it will be a big change. He'll be bringing his lunch so I've been researching fun lunch ideas for kids. If anyone has any suggestions or tips please let me know. This is all new to me!
As I mentioned I haven't been in the kitchen a heck of a lot recently. Here is a super quick and easy recipe for lemon filled crescent rolls. I remember seeing this on a blog (I can't even remember which one) a long time ago and I never forgot it. Mostly because of the lemon curd. OH MY! Lemon curd is so delicious and I happened to pick some up at the market this week not knowing what I would do with it. When I got home I remembered the crescent roll idea and decided to try it. I brought the ingredients to my parents house today to make for our mid morning snack. They came out delicious and only took a few minutes to make. Try this...
Line a baking sheet with parchment paper or non stick spray. Take store bought crescent roll dough and spread out into 8 triangles. Put a heaping tablespoon of lemon curd on the bigger part of the triangle.
Fold the thinner piece of dough over the lemon curd and tuck it under to make the "crescent" shape. Bake according to package directions (which will probably be 12-15 minutes in a preheated 350 degree oven).
Sprinkle with powdered sugar and Viola! They are buttery and lemony and Soooo good! I ate two right out of the oven, but they are also good at room temp.
If you prefer, instead of lemon curd you could use a different filling. Try strawberry jam, cream cheese, or nutella. Maybe even add some slivered almonds to the filling. I haven't tried that yet but it sounds yummy. Be creative ♥
It's late now and the house is quiet. I love being the last one up at night. The house is so still and peaceful. By 7am this will be a different house (i.e."One Flew Over the Cuckoo's Nest"). For now I'm going to take my book to bed and enjoy this quiet time before I fall asleep.

I just lost a long comment I just wrote! The crescents look really yummy, filled with lemon curd, which I love. I used to put it in sponge cakes, as a filling. So good!
