Baked Egg Breakfast Sandwiches! ♥

Hell Friends! 


This past weekend I tried my hand at baked eggs in the oven.  I had no idea how easy it was!  

I got this idea from one of Rob's cousins, who every year when we go on summer vacations makes the whole family egg sandwiches for breakfast.  I've been wanted to try making them for ages.  Honestly I don't know why I waited so long. 

They were a cinch to make and John & Rob absolutely love them! 






All you do is grease a muffin tin with nonstick spray....

Crack an egg in the cup and bake in a 350 degree oven for 15 mins.  






I tried mine 2 ways.  One I left as is....and one I scrambled up with a splash of milk. 
Your choice on however you like your eggs 

I seasoned both with salt and pepper too! 






While they are baking toast your English muffins (or toast, bagels, or biscuits : ) 






 When the eggs are done pop them out of the tin and place on the buttered muffin. 





Top with a slice of cheese~

(add bacon, sausage patty, avocado...whatever you like!) 






Top with the other half of buttered muffin and Enjoy!! 





So good!! 

I really like these as a quick on the go breakfast! Pinterest tells me I can make a bunch ahead of time and freeze them but I haven't tried that yet.  If you have please let me know they turn out because....wow, what a time saver that would be : )

Soft Boiled Eggs ♥

 
Hello Friends!
 
This past Sunday I made myself a childhood favorite for breakfast.  Soft boiled eggs!  I'm not exaggerating when I tell you I have not  had soft boiled eggs in years! I used to eat them all the time when I was little. Whenever my Dad would make them on Sunday mornings I would be so happy!! My favorite part was dipping the toast "soldiers" into the egg. YUM. 
 
After all these years I've never attempted to make them myself.  I've always been intimidated and afraid they would come out hard boiled. 
 
I have been craving them lately (and feeling a bit nostalgic I guess :) and decided to give them a try.  I figured the worst thing that could happen would I get hard boiled eggs! Not so bad, right?
 
I looked up the instructions and decided to use the Martha Stewart method, which looked simple.  And guess what?
 
It was!
 
 


Here's Martha's step by step instructions:


Place eggs in a saucepan large enough to accommodate them in a single layer.
Fill the pan with cold water, covering eggs by an inch.
Set over medium-high heat, and bring to a boil.
Remove from heat, cover, and let stand 1 1/2 to 2 minutes.
 
 
While you are waiting make your toast.  Butter and cut into soldiers : )
 
After 2 minutes remove from pan.  Place your egg in an egg cup or juice glass so it sits upright.  Carefully  remove the top of the egg.  Season with salt & pepper.  Dip your toast in the egg and enjoy!
 

They were so delicious and I will surely be making them again!

Strawberries & Cream Scones ♥



Hello Everyone! I have a question for you... 

Have you been craving scones ever since the royal wedding or is it just me? I love scones and I love making scones! When I made my first batch of scones a few years ago I was so surprised at how easy they were.  I don't know why, but I had always expected them to be more complicated.  Not the case.  And the best part...I rather enjoy having my hands in dough...(again...just me?) 

Since strawberries are at their sweetest now, I want to share with you a recipe for 

strawberries & cream scones.

They are divine ♥ 




Here's how you make them.... 


2 cups flour
1/3 cup plus 2 teaspoons sugar, divided
2 1/4 teaspoons baking powder
1 teaspoon grated lemon peel
3/4 teaspoons salt
1/4 teaspoon cinnamon
1/4 cup cold butter, cubed
2/3 cup half & half cream
1 cup coarsely chopped fresh strawberries
1 egg lightly beaten




In a large bowl combine flour, 1/3 cup sugar, baking powder, lemon peel, salt and cinnamon.
Cut in butter until mixture resembles coarse crumbs. Stir in cream just until moistened.
Knead in strawberries.  (I used a potato masher to gently mash them in). 





Turn dough onto a lightly floured surface. 
(*tip- flouring your hands will help the dough from sticking to you*) 

Pat into an 8 inch circle. Cut into 8 wedges (they need not be perfect so don't worry about that : )  and place on a baking sheet - greased or lined with parchment paper.  Brush with egg and sprinkle with cinnamon and sugar.  

Bake at 425 degrees for 9 - 12 minutes.  

They are sweet and cinnamon-eee and strawberry-eee....and I know you will love them.

Banana French Toast in a Mug...♥

Good Monday Morning!
 
I hope your week is off to a great start.  It's very cold here so to warm up I thought I would share with you this recipe for French Toast for one! Looking to treat yourself? Well, here you go! I heard about this recipe on one of my favorite podcasts Meal Makeover Moms.  Janice and Liz are the best and taking everyday recipes and making them over into healthier versions.  They also have some great shortcuts - like this one.  If you want a hot breakfast and don't have the time (or desire) to take out the frying pan, then this is for you.  It's so easy.  I made it twice this past weekend. 
 
French Toast in a mug.....who knew?
 
 
 
 
1 large egg, beaten
1/2 ripe banana, mashed
2 tablespoons low-fat milk
1 slice bread, cut in 1/2 pieces (the recipe called for wheat bread - I used Italian bread)
a few pinches cinnamon
1/4 blueberries or sliced bananas (optional)
 
 
 
 
Spray the inside of a microwave safe 12 oz. mug with cooking spray.
 
Place egg, banana, and milk in a bowl and whisk until well combined.  Stir in the bread and cinnamon until the bread is covered with the liquid and then transfer the mixture to the mug. 
 
 
 
 
Microwave until the egg is cooked through, about 90 seconds.  If the egg is set, remove from microwave. If not, cook another 20 - 30 seconds (in 10 second increments).  Keep a watchful eye on the mug.  If you see the French toast rising stop the microwave.  You don't want a mess : )
 
 
 
 
Remove and top with optional topping - blueberries, bananas, or anything you like. 
I added some maple syrup. 
 
 
 
 
 
I couldn't believe how quick and easy this was.  Totally satisfying and a great way to start the day ♥
