Monday Thoughts ♥


 Hello Friends! Happy Monday! I've been busy working all day but wanted to pop in and say a quick hello and show you my hyacinth plant.  A sure sign that spring is on the way! Every year at this time I treat myself to one from the grocery store.  I LOVE the smell of these plants.  This one has three big bulbs, so I'll be blessed with lots of flowers.  Year after year I replant the bulbs but I've never had luck with them blooming again.  I'm not sure what I'm doing wrong but I'm hopeful this is my year.   

After a very busy and stressful week last week, I had a nice restful weekend and I'm feeling positive about the week ahead.  I heard a quote yesterday that really resonated with me.  It was "happiness is not a destination" and isn't it the truth. How many times have we said to ourselves "I'll be happy when (fill in the blank...)" but it never ends, does it?!  I'll be happy when I lose 10 pounds, or I'll be happy when I get a promotion. I'll be happy when I buy a house or have a baby or go on a trip.  And so on and so on and so on.  There's always more.  It's never a destination.  It's a journey. I don't think anyone is truly happy all the time no matter what they have or have done, are they?  I think I'm striving more for contentment than happiness, if that makes sense.  And like everything else, I take it one day at a time.  I can't worry about tomorrow.  I can only live today. Anyway, that's what I was thinking about and wanted to share with you.  





The weather here today is sunny and in the 40's.  I'm hearing this week we may even touch 50!  I have the heat a touch lower today which is nice, and it doesn't look like I'll need a fire in the wood burner this week! :)

Tonight's plans are chicken francese for dinner (a new recipe I saw online last night) and watching the movie Conclave.  Have you seen it?  Next week is the Oscars and I've hardly seen any of the movies!

Wednesday thoughts...♥


Sometimes I need a pep talk.  Sometimes I need someone to tell me that it's OK.  

Everything will be OK. 

Take one day at a time ♥ 





I think this is something we all struggle with.  Nothing is perfect.  Life is never perfect.  





 I am a worrier.  I always have been. I let things bother me.  I know I shouldn't. 

I make a conscious effort to look for the positives every day.  They are there.  

Even if you don't notice them right away.

Keep looking ♥ 




We must not forget to take care of ourselves.  Whenever I let myself fall to the wayside I feel it in my heart.  

Be strong for yourself so you can be strong for others ♥ 






 I fall victim to all of these things all the time.  





 This helps.  

Positive thinking.  




And faith.  Always faith ♥

Summer favorites: peach crisp and sunsets ♥

 


It's peach season! Finally the peaches are ripe and juicy.  I've been craving them so badly and when we got invited to a party this past weekend I knew exactly what I wanted to make: peach crisp!


 
 
I waffled back and forth between peach crisp and peach cobbler.  In the end, I went with the crisp because I kept thinking about the cinnamon, sugar, and oats on top.
 
It gets me every time  ♥
 
 
 
 
 
6 cups of sliced peaches (no need to peel them!) - about 6-8 peaches
3/4 teaspoon cinnamon
1/2 teaspoon vanilla
3 tablespoons sugar
1 cup + 3 tablespoons flour
1 cup old fashioned oats
1 cup brown sugar
1 cup butter - cold, cut into cubes
 
Preheat oven to 350 degrees
 
Grease a 9x13 baking dish
 
In a large bowl toss peaches with cinnamon, vanilla, 3 tablespoons sugar, and 3 tablespoons flour.
 
Pour into greased baking dish.
 
 
 
 
In a separate bowl, combine 1 cup flour with old fashioned oats and brown sugar.  Cut in butter until you have a crumbly consistency.
 
Pour mixture over the peaches.
 
Bake uncovered 45 - 50 minutes.
 
 
 
 
There is something about a crisp that people really love.  My family scooped this one right up! So much so that I forgot to take a photo of me actually eating it.  It was great, and I won't even mention how the taste of cinnamon reminded me that Fall is coming.  I won't even mention how happy that made me feel....but it did! ♥
 
 
 
 
In other news....
 
Last week I saw a gorgeous summer sunset.  I caught a glimpse of the pink sky through my window and I actually ran outside in my ugly PJ's to see more. Luckily no one saw me. 
 
It was worth it!
 
I am constantly in awe of a sunset, even though it happens every night   : )
 
 
 
 
 I treated myself to an after work margarita! With salt : )
 
So good!
 
 
 
 
We've been lucky enough to enjoy a few days like this - poolside and fun with friends!
 
 
 
 
And most of our nights lately look like this...with the Disney Channel in the background.

Summer reading? I've been trying but he's just not interested.  I have a feeling we're going to be doing a lot of cramming at the last minute.  Ugh.

Less than two weeks to go before our trip and the excitement is building...for all of us!
My lists are made and packing begins this weekend.  Yay!
